I don’t play either game but I’m looking at the rules now. One main difference I notice is the following.
In Ultimate you can only bet on one street. If you bet the flop you’re not allowed to bet the turn or river. If you check the flop and bet the turn, you can’t bet the river. If you check the flop and turn, then on the river you’re forced to either bet or fold (you can’t check). If you bet the flop you have a choice of 3x or 4x your ante. On the turn you can only bet 2x, and on the river you can only bet 1x.
In Bonus you can bet on the flop and turn, both are optional. You can only bet 1x your ante.
